The Bresse originated some 500 years ago in the Bresse region of France. They are easy to raise, and are good foragers. They are considered “the queen of chickens, and the chicken of kings - the most delicious chicken in the world”. They are rare and have only been in the U.S. since 2011. Since our birds are not raised in France they must be considered American Bresse.

Our flock came from Greenfire Farms and Bresse Farms. They lay 250 medium to large cream eggs a year. We are glad they make excellent foragers and offer 4-5 eggs a week. Males are 6/7 lbs and females 4/5 lbs.

For centuries, the meat has been sought after for its unique flavor. They come in many colors, but all share clean blue legs, and a single red comb. Even though we are not raising traditional Bresse chicken, we can try out take on the American Bresse and raise birds on pasture, and finish them on daily, grains/corn should you choose to. During the fattening process their meat can take on a marbling effect just like beef and the result is a 6/7lb bird in 4 / 4.5 months.

According to Greenfire Farms “Bresse belong to a genetically distinct chicken breed that metabolize feed in a certain way, distribute certain types of muscle across their frames in a certain pattern and at certain rates, and a produce meat with a unique and distinct flavor. B Bresse are known to have unusually light bones and thin skin.”
